Courts have ordered AI providers to preserve and produce user conversations. A vendor's promise not to train on your data is a contract; whether its systems can retain that data at all is an architecture question. The two are not the same, and only one survives a subpoena. The back half is practical. You will leave with a standard for what belongs in an AI tool and what never should, plus the questions to ask a vendor before an owner's financials go anywhere near it.
